Loaded Cheesy Cauliflower Casserole
2 lbs. cauliflower florets, chopped and steamed
1 (8 oz.) package cream cheese, softened to room temperature
1/2 cup sour cream
1 1/2 cups shredded sharp cheddar cheese
1 1/2 cups shredded Colby Jack cheese
1 tsp. garlic powder
1/2 tsp. onion powder
6 strips cooked bacon, chopped
1/2 cup chopped chives or sliced green onions
1/2 tsp. salt
1/4 tsp. ground black pepper
Preheat oven to 425F and spray a 13×9″ casserole dish with nonstick cooking spray.
Combine sour cream, cream cheese, both cheese, garlic powder, and onion powder in a large bowl and stir.
Add cauliflower, half of the bacon, half of the chopped chives or green onions, salt, and pepper and stir to combine.
Pour into the prepared dish and sprinkle with the rest of the bacon.
Bake for 25 minutes and garnish with the remaining chopped chives.
